Recipe: Butter Mint Ice Cream

Butter Mint Ice Cream

 

INGREDIENTS:

  • 2 cups heavy cream
  • 1 (14 oz.) can sweetened condensed milk
  • 1 tablespoon butter, melted
  • 1/2 tsp vanilla extract
  • 1/8 tsp peppermint oil flavor
  • 5.5 oz. bag of butter mints, each cut in half
  • 2 drops yellow food coloring
  • 1/4 tsp lemon extract (OPTIONAL)

DIRECTIONS:

  1. In a large bowl, whisk sweetened condensed milk, butter, vanilla, peppermint oil, food coloring, and lemon extract (if using).
  2. Stir in halved butter mints. Mix well.
  3. In a separate large bowl, whip the heavy cream to stiff peaks.
  4. Fold whipped cream into milk mixture.

Pour into a large (2-quart) container and cover. Freeze 6 hours or until firm. Store in the freezer.
